Ndise soup (Synonymous with the Anaang tribe in Akwa Ibom State, Nigeria)
Ingredients
- Guinea fowl
- Okra
- Goat meat
- Periwinkle
- Crayfish
- Stockfish
- Shaki
- Ndise leaf
- Banga
- Onion
- Pepper
- Dry fish
- Mushroom
- Cow skin (Ponmo)
- Local spices
Directions
- In a boiling pot of water, add your Banga, then add onion; add dry fish; add goat meat, add cow skin (ponmo) and stir. Then cover and allow to boil for 5 minutes.
- You can now add the Guinea fowl; add Shaki; add Stockfish; all local spices; add your blended pepper; add salt to taste and add periwinkle. Stir and allow to boil for 3 minutes.
- Then add your mushroom; add okra and finally add the Ndise leaf. Now stir properly to mix and allow to cook for 2 minutes and your palatable Ndise soup is ready to be savored.
