Edo Esan (Black Soup)

Edo Esan or Black Soup is a delicacy from Esan people of Edo State, Nigeria and is quite tasteful and delicious.


  • Dry fish
  • Assorted meat
  • Crayfish
  • Ground pepper
  • Stockfish
  • Banga (palm fruit sauce)
  • Onion
  • Local seasoning
  • Salt to taste
  • Bitter leaf, Scent leaf & Oziza leaf

Method for preparation

1Blend all the leaves together. The blended leaves serve as the soup thickener and also give it the black coloration, hence the name black soup. You can blend to paste by adding a little water to ease up the movement of the blender blades. I prefer to blend the bitter leaf separately, while the Oziza and Scent leaves are mixed together.

2Wash and boil the meat with a half cup of onion, add seasoning and a pinch of salt. Cook for 15-20minutes until the meat becomes soft and easily chewable, you can add a little water to prevent it from getting burnt.


3Add the dry fish, stockfish, and crayfish, add the Banga sauce and allow to cook for about 10 minutes until the soupy mixture thickens.


4Add the blended leaves, then stir, add salt to taste, allow to boil for 3 minutes and your delicious EDO ESAN (BLACK SOUP) is ready to be savoured.
