This soup is special to the Igbo speaking communities of Nigeria, especially people from Abia state.
- Achara leaf
- Cray fish
- Dry fish
- Assorted meats
- Local spices(Ogiri/Okpehe)
- Palm oil
Method for preparation
1Add palm oil to your pot on the fire, add onion, add your already washed snails and stir.
2Add your already boiled assorted meats, add stockfish and the meat stock and allow to boil for 3mins.
3Add your blended pepper, add the blended crayfish, local spices and salt to taste, stir and cover to boil for about 5mins.
4Add your already washed dry fish, add your egusi that has been blended and moulded into lumps and stirs gently to prevent the egusi lumps from breaking, then cover and allow to boil for 2mins.
5Finally, add your Ukazi leaf, and Achara leaf and stir to mix properly, then cover to cook for another 2mins and your delicious Achara soup is ready for consumption.
This soup can be served with Semo, wheat and other swallows of choice.
